Congee is a particularly digestive-friendly way to start your morning. Congee is similar to oatmeal except you use brown rice and slow cook it for 8 to 10 hours. The prolonged cooking time allows the fiber of the rice to break down more completely (your crock pot is doing some of the hard digestive work for you). If you don’t have an immersion blender that’s fine, you can leave it unblended, but blending improves the texture and makes it even more digestible.
